With the recently published Demo Rules and the Demo Army Books, I plan some introduction games here in Dresden. I don't know where and when yet, but there is a gamestore (and I know the owners) and some guys want to found a club as well, so there are possibilities.
Mostly, I will use the lists from the Demo Armybooks from CEVO, but from some armies there hasn't been published a demo version yet, so I came up with my own ideas. It's all for 200 AP. And obviously, I chose those models I've mostly already painted, but there's still some work to do.

If these lists are for demo purposes, then I'd strongly recommend not using magic in any of the lists. Keep things as simple as possible for demo games. Along those lines, I'd probably say that artifacts would be discouraged. Make it simple for new players to see all of your rules on the cards and not have to reference anything else.
